Summer Breakfast Super Easy Overnight Oats

This is hands down the favourite recipe from my healthy cooking workshops.

I’ll say, this was as surprise.

Here I am, pretending to play chefs, funnelling my all my creative and execution skills to complex (not really) super food feast to impress my guests and then…

So, what was your favourite?

The oats. Definitely the oats.

Which actually makes total sense.

This recipe ticks all the everyday kitchen super hero boxes.

It’s easy, super quick, it’s jam-packed with super foods and requires no actual cooking. And the taste? Oh-so naughty – when it’s really super healthy. What more does a girl need?

A lot actually, but I don’t think we’ve got time for that today.

This overnight oats recipe will make your breakfast so easy and delicious that you’ll have no excuses to skip this super important meal – or to eat junk instead (yes pain au chocolat, I’m talking to you). Prepare it the night before, grab and go to the office the next morning (use a jar) or enjoy at home with some fresh berries and flaked almonds. For a protein top up add a tablespoon of your favourite unflavoured powder to the mix (I like this one).

Kids love this too because they get to choose their own toppings. Do the maths and go a step further by prepping 2 days of breakfasts – that’s your morning energy sorted: BOOM!

Ingredients (serves 1)

  • 6 tbsp/ 200gr Greek Yogurt
  • 1 tbsp chia seeds
  • 2 tbsp oats
  • 1 tsp cinnamon
  • ¼ grated apple
  • 1 tsp honey

Mix all the ingredients together in a bowl and leave in the fridge overnight. That’s it. Really.

The chia seeds will expand and the texture will become a lot thicker and creamier, YUM. If you have a dairy intolerance use almond milk instead of yogurt. Otherwise baby, it’s got to be Greek all the way. Enjoy with some berries and flaked almonds on top.
